The ingredients for six portions are 3 to 4 cups of oat flakes, 1/2 cup of sunflower seeds, 1/2 cup chopped almonds, 1/4 cup of sesame seeds, 1/4 cup flaxseed, 1/2 cup of oil, 1 tablespoon of carob powder, 1 teaspoon of cinnamon, 1/2 cup dry sweetener, 1/2 tablespoon of salt, 1/2 cup grated coconut, 1/2 cup raisins, 1/2 cup of chopped dates, 1/2 cup dried cranberries.

The first step is to preheat the oven to 350° F (177° C) and grease a lasagna mold. Then, mix in a large bowl the oat flakes, sunflower seeds, almonds, sesame seeds, and flax seeds.

In another medium bowl, beat the oil well, the carob powder, the cinnamon, the sweetener, and the salt, until it’s made like a syrup.

Combine the two mix, the one in the large bowl and medium bowl, and pour the mixture into the lasagna mold and bake for 15 to 20 minutes until the top of the mixture is browned.

Turn over the mix and bake one more time on the other side for 5 to 8 minutes.

The last step, while the granola is cooling, add the nuts, and, when it’s totally cool, it’s ready to eat.

Veggie croquette and cheese croquettes

This is what you’re going to need for them: 150 gr of zucchini, 75 gr of vegan cheese, 150 gr of flour, 600 ml of almond milk, extra virgin olive oil, bread crumbs, salt, garlic powder, and parsley.

Wash and cut the zucchini in small pieces or in cubes. Put the fire with olive oil and when it starts to get soft, we are adding flour, little by little.

Let’s make a couple of minutes and start with the almond milk keeping on low heat.

Add little by little as it is absorbed and stirring well so that no lumps remain.

Once we have the homogeneous mass, we add the cheese that previously has been grated so it is melted and integrated. Add salt to taste.

Remove from heat and put the dough well extended in a dish so it could cool easily.

After a while, put into the refrigerator a couple of hours to take more firmness.

Following, make the balls and batter. For the last one, you can use vegan bread crumbs with some garlic powder and parsley, and almond milk to moisten them.

Finally, fry them with plenty of oil and pour them when hot.

After they are well browned, they’re ready to enjoy!
